Current Position:
  Dr. Hengjian Wang (1991) joined the FST department as a Senior Research Assistant for the Meats group after receiving his Ph.D. from Kansas State in 1991. Some of the projects he is currently involved with are: selected skeletal alterations to improve tenderness of beef round muscles, characterization of sliced surface defects in cooked section and formed turkey products, and objective and subjective evaluations of low-fat restructured pork containing whey.


Biographical Notes:
  In his free time he enjoys photography and fishing. He and his family also enjoy traveling; in August they visited Niagara Falls and Toronto, Canada.
