Faculty Dr. Susan Duncan is involved with the chemical and sensory evaluation of dairy products. Her current projects are focused on cream. Dr. Bill Eigel focuses on food biochemistry with emphasis on proteins and enzymes.His current projects involve the use of enzymes in food processing applications. Dr. Joseph Marcy's research interest areas are packaging, integrity testing, modified atmosphere packaging (MAP) and aseptic packaging research. Dr. Susan Sumner's
