The Virginia Tech Dairy Foods Research Group is a subsidiary of the Food Science Department at Virginia Tech. Comprised of five faculty members, its main focus is to the Virginia dairy industry. Each of the faculty members have different areas of interest applicable to the dairy industry. From packaging to sensory, microbiology to chemistry, all of the main issues relevant to the dairy industry can be addressed.

Faculty

Dr. Susan Duncan is involved with the chemical and sensory evaluation of dairy products. Her current projects are focused on cream. 

Dr. Bill Eigel focuses on food biochemistry with emphasis on proteins and enzymes.His current projects involve the use of enzymes in food processing applications. 

Dr. Joseph Marcy's research interest areas are packaging, integrity testing, modified atmosphere packaging (MAP) and aseptic packaging research. 

Dr. Susan Sumner's research and extension program concentrates on elimination of pathogenic microorganisms in dairy products and juices, sanitation issues and the
implementation of HACCP programs.
