Subject: Technical Meeting: Impacting Wine Mouthfeel

This program will be conducted by myself and a colleague from Scott Labs, Michael Jones. Michael is currently the fermentation point person for Scott Labs. He has extensive experience in the wine industry. Michael has worked for Domaine Chandon and Hansell Vineyards in California, in Burgundy, and in Australia’s Hunter Valley.
The half day program will highlight practical winemaking issues impacting mouthfeel. It will include discussions and sensory evaluations covering the following topics:
- A review of mouthfeel and structural and textural components
- A review of the interactions of structural and textural components
- Yeast strain and mouthfeel
- The use of enzymes
- The impact of various enological tannins
Course fee is $15, payable at the door.
Pre-registration is requested by May 26.
We have a limited amount of wine. To assure we will have wines for you to evaluate, pre-register.
